 | Peach Cobbler
~ It's okay to treat yourself once in awhile as long as you avoid
overdoing it. ;^)
FILLING INGREDIENTS

 | 8 -10 peaches, peeled, pitted and sliced into thin wedges
(Canned peaches do not work well, use fresh peaches peeled and sliced.) |
 | 1/4 cup white sugar |
 | 1/4 cup brown sugar |
 | 1/4 teaspoon cinnamon |
 | 1/8 teaspoon ground nutmeg |
 | 1 teaspoon fresh lemon juice |
 | 2 teaspoons cornstarch
FOR TOPPING

 | 1 cup all-purpose flour |
 | 1/4 cup white sugar |
 | 1/4 cup brown sugar |
 | 1 teaspoon baking powder |
 | 1/2 teaspoon salt |
 | 6 tablespoons unsalted butter, chilled and cut into small pieces |
 | 1/4 cup boiling water
OPTIONAL: Mix together 3 tablespoons white sugar and 1 teaspoon cinnamon
for a final topping. Serving suggestion: serve with vanilla bean ice
cream.
Directions:
1). Preheat oven to 425. In a large bowl, combine peaches, 1/4 cup white
sugar, 1/4 cup brown sugar and cinnamon, nutmeg, lemon juice and
cornstarch. Toss to coat evenly and pour into a 2 quart baking dish. Bake
for 10 minutes.
2). Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4
cup brown sugar, baking powder and salt. Blend in butter lightly with a
fork, until mixture resembles course meal. Stir in water until just
combined.
3). Remove peaches from oven, and drop spoonfuls of topping over them.
Sprinkle the entire cobbler with the sugar and cinnamon. Bake at 350 until
topping is golden, about 30 minutes. |
Bread Pudding
I get a lot of my recipes from the internet, including this one, which I
modified by adding walnuts. Walnuts and raisins are optional; however, I
think you are missing out if you leave these ingredients out. :^)
Ingredients:
 | 6 slices day-old bread |
 | 2 tablespoons butter, melted |
 | 1/2 cup raisins (optional) |
 | ½ cup walnuts (optional) |
 | 4 eggs, beaten

 | 2 cups milk |
 | 3/4 cup white sugar |
 | 1 teaspoon ground cinnamon |
 | 1 teaspoon vanilla extract
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Break bread into small pieces into an 8 inch square baking pan. Drizzle
melted butter or margarine over bread. If desired, sprinkle with raisins.
3. In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and
vanilla. Beat until well mixed. Pour over bread, and lightly push down
with a fork until bread is covered and soaking up the egg mixture.
4. Bake in the preheated oven for 45 minutes, or until the top springs
back when lightly tapped. |
New York Cheesecake #1

cheesecake with fruit! :^)
Ingredients:
 | 1/3 cup butter, melted |
 | 1 1/2 cup cinnamon graham cracker crumbs |
 | 3 1/4 packages (8 oz. packages) cream cheese, softened |
 | 1 can 14 oz. sweetened condensed milk |
 | 2 tsp. vanilla extract |
 | 2 eggs
Directions:
1. Preheat oven to 300 degrees F. Combine graham cracker crumbs and
butter; press evenly on bottom of 9 inch pie pan.
2. In large mixing bowl, beat cream cheese until fluffy. Gradually add
sweetened condensed milk, beating until smooth.
3. Add vanilla and eggs, mix well. Pour into prepared pie pan.
4. Bake for 1 hour, turn off oven but leave cheesecake in oven with door
propped slightly open for an additional hour.
5. Refrigerate at least 6 hours until firm. |
MisterGoodBuy's Natural Banana Oatmeal
Cookies
I’m still working on this all natural alternative to sugared cookies
recipe-- the banana makes them soft. However, my Mom says they taste just
great! :^)
Ingredients
 | 1/2 cup honey |
 | 1 cup butter |
 | 2 eggs |
 | 2 teaspoon vanilla extract |
 | 1 cups all-purpose unbleached flour |
 | 1 cup wheat flour |
 | 1 teaspoon baking soda |
 | 1 teaspoon baking powder |
 | 2 tbsp milk |
 | 1 teaspoon salt |
 | 1 teaspoon ground cinnamon |
 | 1 ripe banana, mashed |
 | 2 cups rolled oats |
 | 1/2 cup walnuts |
 | 1 cup raisins
Directions
1. In a medium bowl, cream butter, milk, honey and banana together until
smooth. Stir in the eggs and vanilla. Sift together the flour, salt,
baking soda, baking powder and cinnamon, stir into the creamed mixture.
Then add the rolled oats, walnuts and raisins, mix until well blended.
2. Drop dough by rounded spoonfuls onto unprepared cookie sheets. Bake 375
degrees for 10 to 12 minutes in preheated oven. Remove cookies from pan to
cool on wire racks.
